Hello again my friends! It’s nice to meet you over coffee again this week. Last weekends adventures in Pasta Making went really well. I ended up making two full batches, one set went to a friend for her birthday, and the other batch we got to enjoy. I just did a basic ricotta filling (with some Italian Spice from Penzy’s). I have a goal to finish up my homework for the semester by next Tuesday so that I can start doing all the other projects that have been put on hold since Summer started…. Yeah, it’s been a long time of neglecting some projects, and preparing and being excited about others. The first thing I’m going to do from this list – make a bunch of ravioli in different flavors that we can freeze to enjoy later!

See the pretty pasta? The dished plate includes a delicious Gluten-Free Chicken Parmesan that I got from a local bakery that’s been doing food delivery during the pandemic (Just a Dash is AMAZING, should anyone be in the Portland Metro Area).

This weekend will largely be dedicated to homework. I have two final projects to work on which will take most of my attention. On Sunday I also have to go get a COVID test. I’m going in next Friday (the day after Thanksgiving) for an upper-endoscopy to see if we can start figuring out why my stomach is having such issues, so I need to get tested first. I am not looking forward to that, getting the nose swab does not seem like a grand time! But then it’ll be done, and I just get to go about my normal (since I am not leaving the house, or seeing anyone, or anything anyhow) until the procedure.

Thanksgiving this year is just Mom and I, but we’ve ordered our meal from Just a Dash and that’s going to be DELICIOUS (I will share pictures!!) It’ll be nice to not have to really do much cooking – just heating things up!

  1. First, you pasta looks incredible – bravo! Second, I’ve had two covid tests, and if you are lucky they are a very gentle swab inside you nostril, NOT the poke into your brain kind! Finally, I shared my recipe for White Castle Slider Stuffing for Thanksgiving, which is real and it’s delicious!!!!!

    (1) Thanks yet again for hosting our coffee shares. It has been a huge blessing for me over the, OMG, yes, years now.
    (2) You had me at pasta, but you also reminded me of decades ago we got a pasta maker from my father in law and we used it to make wonderful dishes for our new born children but even though we loved it, it took too much time and we haven’t used it, ooo, for at least 20 years now. Well, that was hard to realize and admit. . .
    (3) I hope you quickly find a solution to your stomach issue. I’ve only minor issues like this, but can imagine how miserable and tired of being miserable you must get.
    (4) I know of that covid-19 swab through my daughter only. She works as a medical advocate for mentally challenged adults committed to the facility she works for and gets tested monthly in this manner. I don’t have any words of wisdom for you on that swab. It’s just a necessary annoyance really and I’m convinced it is helping us push covid back into history. Hang in there. You can do this as we’ve seen you master many bigger challenges.
    (5) Did I say thanks for hosting our coffee shares? Oh yes, Well, because of you, I have a handful of new friends around the globe and I’m very thankful for each of them, so I’m also very thankful – for – you.
